There is a medication that you can get to moisten the mouth if you have no saliva. You need to discuss it with your doctor. As for the eating normally, everyone heals at different rates. He may just take a little longer. It might help if he could eat some cold foods, such as popsicles, or ice cream. Since the cold might ease the swelling and soreness in the throat. Again, you might even talk to the doctor about this and he may have a suggestion for relieving the swelling and soreness. Also a good dietitian could help with foods that he could manage as well as suggestions on the dry mouth problem.
